Vera-Felicie’s honors renowned mixologist Dale DeGroff’s contention that savory elements can work in a cocktail. Here, celery bitters take the place of the standard celery stalk, while the zing of mustard creates what Vera-Felicie refers to simply as “the jam.”

Cocktail

2 dashes celery bitters

4 dashes Tabasco sauce

1 dash freshly squeezed orange juice

Pinch of black pepper

1 teaspoon whole-grain mustard

2 ounces Beef Stock

2 ounces vodka

2 ounces Sacramento tomato juice

Ice

Garnish

Orange peel

Whole cloves
